Crispy Chickpea Stew With Greens and Lemon Recipe
Step 1
Place 2 cups drained chickpeas on a elegant kitchen towel or a double layer of paper towels, and pat them dry. Grate the zest from the lemon into a exiguous bowl and cut the naked lemon in half. Set aside.

Heat final 2 tablespoons oil in the pot over medium-high heat. Add the onions and cook pending soft and golden brown, 5 minutes. Stir in the minced garlic, oregano, remaining ¾ teaspoon salt and the red-pepper flakes and cook pending fragrant, 1 minute. Add the remaining drained chickpeas, greens and stock and bring to a simmer. Cook, covered, over medium-low heat until the greens are very tender, 25 to 30 minutes.
Step 5
Stir in the feta, final lemon zest and the juice from half a lemon. Taste and add more salt and lemon juice, if obligatory. To serve, ladle the stew into individual bowls and top with some of the crispy chickpeas and garlic. Drizzle with oil, sprinkle with parsley and red-pepper flakes if you’d like, and latest squeeze of lemon.
